Italy meets the US in a recipe fit for the big screen
When one dreams of pasta – which is more often than most of us would like to admit – Italy is never too far away. After all, Italy is all but defined by its relationship to olive oil, delicious carbs and rich tomato sauces. But when it comes to Peter Clemenza’s pasta dish from “The Godfather,” the situation is a bit more complicated. Pasta in a traditional and truly Italian form is typically served without meat. In contrast, pasta with meatballs were (and remain) wildly popular in the USA. Indeed, spaghetti with meatballs is so well-known that this dish often steals the spotlight in movies and on TV. Which brings us, of course, to the “The Godfather.”
Keep your friends close, but keep your spaghetti closer
Enough chit-chat, it’s time to cook! For Peter Clemenza’s spaghetti, start by preparing the meatballs. They require the most effort and attention. You’ll need:
- Ground beef
- Ground pork
- Bread crumbs
- Grated parmesan
- Eggs
- Salt
- Pepper
- Frying oil
Combine all the ingredients in a bowl, then mix thoroughly. Shape the meatballs and fry them until golden brown on each side. Place the finished meatballs on kitchen paper to absorb excess fat.
Alongside the meatballs, add Italian salami to the tomato sauce. Slice the sausage into thick pieces and sauté them in a pan.
The meat is ready. Now, prepare the sauce. And for that, you’ll need:
- Canned tomato
- Tomato paste
- Red wine
- Sugar
- Oregano
- Basil
- Garlic
- Oil
Start by sautéing the minced garlic in olive oil. Add the tomato paste and then the canned tomatoes. Let it simmer lightly and add the meatballs and sausages. Pour in the wine and season the tomato sauce with a dash of sugar and herbs. Cook the tomato sauce until it thickens to your desired consistency.
Last but not least, the spaghetti. Boil the spaghetti in salted water until al dente. Finally, drain the pasta then give it a quick rinse with cold water.
To serve The Godfather pasta, portion out the spaghetti on a deep plate. Then, pour tomato sauce on top before mixing everything together thoroughly. Now, generously ladle the sauce with meatballs and sausage over the pasta. Finally, garnish the dish with parsley and grated Parmesan. Bon appétit!
